The value of an aircraft is not only the aircraft itself but also in the associated records. For some components we need records reflecting the complete history of the components since production (so-called back-to-birth paperwork, required for components such as engines and landing gears). Without proper records aircraft components can not be re-used on other aircraft and the remaining value of end-of-life aircraft is only in the metals.
